Who can resist the aroma of cinnamon, apples and cardamom at this time of year. The weather may be windy and wet but that shouldn't dampen your spirits. A few store cupboard essentials and 2 apples and you too can whip up a treat in no time. Here's my go-to recipe.
Set oven to 175c. Grease and line a baking tin. I like a circular one for this cake but an oblong bread tin works just as well.
125g butter (room temperature)
200 ml sugar
2 eggs
250 ml flour
1 tsp baking powder
1 tsp cinnamon
Half teaspoon cardamom
Half teaspoon sea salt flakes ( don't use table salt)
50 ml milk
Blend the sugar and butter, then add one egg at a time and mix well. In a separate bowl blend all the dry ingredients, apart from the cinnamon. Carefully blend the dry ingredients into the wet until mixed with no lumps. Add milk and stir gently till you have a smooth consistency. Pour the mix into the greased tin. In a separate bowl mix the cinnamon and 2 tsp sugar, peel and slice the apples and stir well in the cinnamon sugar mix.
Arrange the apples on top of the cake batter and push in slightly. You still want to see the apples. Bake at the bottom of the oven for between 40-45 minutes. Serve with cream, crème anglaise or ice cream. I like this apple cake for breakfast with a good cup of coffee.
