Recipe for success

It doesn't take long to become hungry when out walking, especially with the abundance of good ingredients that surround me on my nature walks. Today I spotted a female black grouse, while picking pounds of both yellow and funnel chanterelles. Thanks to my large kitchen garden I always have a plentiful supply of onions and herbs. Sadly the grouse wasn't fair game but I will happily settle for an earthy risotto. The fragrant flavours from the freshly picked mushrooms, a dash of vermouth and a generous grating of parmesan just prior to serving makes for a simple yet luxurious dish.
